Dough made of stone-ground type 1 flour, enriched with a mix of cereals and seeds left to rest overnight in water and natural liquid yeast. A mix of taste and lightness, with the inevitable slightly acidic scent of mother yeast.
On the same day we bake the wholemeal bread, durum wheat bread and the Scrigno with mother yeast.

Store in a paper or cloth bag for six days in a dry environment.
Don't keep me in a plastic bag. Don't let me get some air. Don't keep me in the fridge. Keep me in the freezer (but sparingly, come on, sourdough bread lasts six days if stored in the canvas bag!).
