Cuisine is a collision of ideas, techniques and cultures, and it is the story of the land. Quality raw ingredients, produced according to criteria of sustainability and seasonality, represent the elements at the base of our preparations.
The seasons are our colors, and what we offer follows the changing palette of raw ingredients.
Crunch
Our crunch is the star.
It is a dough with a unique lightness and crunchiness, made of semi-wholemeal soft wheat with sourdough starter. The slow leavening lasting more than twenty-four hours and the large quantity of water required by the dough give us a perfect and unique base, to be filled as required and which makes you swoon.
